Ingredients
 1 ½ cups chopped white onion (medium onion)
 2 cups low sodium veggie broth (use up to 2 cups as needed)
 ¼ tsp salt (to taste)
 ¼ tsp black pepper (to taste)
 3 med to large garlic cloves (more or less to taste)
 3 cups cauliflower (small - med head)
 2 tbsp nutritional yeast (more or less to taste)
 2 tbsp fresh lemon juice (more or less to taste)
Optional
 ¼ cup raw, unsalted cashews (more or less for desired creaminess)
Directions

Sauté onions in 1 cup of broth until very tender (add small amounts of broth or water if needed to keep from burning)

Add garlic once onions are translucent - cook for about a minute

Add chopped cauliflower and remaining broth - cover and cook until cauliflower is soft and liquid is gone

Transfer the veggies to a high speed blender and add remaining ingredients (start with less of remaining ingredients and taste once blended - add more if needed)

Blend on high until smooth

Notes

+ You can steam the cauliflower separately
+ A high speed blender like a vitamix will blend very quickly (minute, less then two)
+ If using cashews soak them first if using a regular blend so the sauce won't be gritty (few hours or overnight)
