Ingredients
 3 lbs yukon gold potatoes
 ½ head cauliflower (use the whole head if it's small)
 ½ cup veggie broth
 Salt & pepper to taste

Boil potatoes with skin - boil until tender (can stick a knife/fork through)

Steam cauliflower until tender

Drain potatoes, add cauliflower and the salt and pepper and any other seasonings

Either mash in pot with potato masher or carefully add to a food processor and blend until desired texture.

Taste and add any additional broth, plant milk or seasonings to desired texture and taste.
