Heat oven to 400 degrees F
Dice onion and pepper
Manually chop/shred heart of palm (or do quick bursts on food processor)
Add remaining ingredients and mix with hands or fork until all combined
Make uniform patties using a measure cup or scoop
Bake on parchment paper in heated oven 8-10 minutes on each side
+ Crabless cakes can be fried* or baked (both w/no oil) - use a nonstick pan for no oil frying
OR
Fry lightly in nonstick pan than brown in the oven
+ Vegan mayo and sour cream can be homemade with tofu or cashews
+ Adjust ingredient measurements to taste
+ Make small cakes for appetizers (12 mini cakes)
